There's actually some pretty decent Star Wars fanfiction films out there. I found some while looking at videos suggested off of "Batman vs Darth Vader" (a fun short watch). https://m.youtube.com/watch?v=a_GLQZEhG90 Star Wars: Hand of the Empire is the best I've seen so far. I wasn't into the redhead at first but by the end I can see what th directors were trying to do with her. I really like their portrayal of the stormtroopers and the inclusion of Kanan Jarrus and Mara Jade (from canon/Legends) was great. I might update this post with some other links later.
